a 15 will fit, your pare tire is 15x60x185 at 47.5mm offset and rim is 6" wide
The Fiesta ST supplement document specifies this:

"Compatible Snow Tire and Wheel Packages
Tire size: 205/40 R17
Required wheel: Original equipment ST wheel or equivalent
Tire size: 195/45 R16
Required wheel: Owner supplied. See your Ford dealer for suitable wheels from the Fiesta lineup."

1st question: Does this mean that Ford is instructing us NOT to put 15" on the car (even if the spare tire is 15")?

I found awesome WRC wheel covers for winter steel wheel.

2nd question: My sales guy told me that I MUST put alloy wheels and CANNOT put steel wheels for the winter. Is this true?

1st i know what the sup. manual calls for i supplied it. :p
2nd i made a call to Ford Performance and he said any wheel that fits this mk7 model should fit the ST, unless he has no clue, but he was the first person to give me intel on my car. so i feel i need to trust him

I do believe that the spare wheel is a steely, and since its a full size tire (not a doughnut) if it fits, so shall others[rockon]

Just a little heads up! The day any of you even think about "stancing" an ST... Sell it... Sell it straight away and leave it for those who want a fully functional ST. :)

I checked with a local tire shop in my region for 15" rims for winter and they recommended that I put 185/60R15 tires. I asked them if I could fit my old car's winter tires, which were 195/60R15. They asked me to verify with my dealer because that difference could void my warranty. Anybody ever heard of this?

LOL, for me it depends on how aggressive the stance is, I prefer the flush look over the extreme stretch and poke.

2019 ST Line owner here running presumably stock (I say presumably stock because I bought the car used with 14K miles on it) 195/50/16 on the stock black spoke wheels.
I feel like the wheel wells need a bit more rubber in them so considering 205/50/16 or perhaps 195/55/16 what tire sizes are others running on their un-modified fiestas?

Welcome to the forum. The front left door jamb should have a decal that explains the tire recommendations.
Post up some images of your ST line! Also mention what options and Transmission are on it. The ST line should have been available from early on. It's too bad they were only offered near the end of Production. IMG_20200224_103612.jpg

Yeah I've seen that sticker and it reflects 195/50/16 which is the stock size for the ST Line I guess. I'm curious if anyone has up sized and how much can you do before something rubs.
tire size calculators show 205/50/16 and 195/55/16 being the closest next size up.

So anybody up-sized?

You are among the first and very rare ST line owners who are posting on U.S. Fiesta forums. There are many Fiesta ST owners who chose to down size their wheel diameter to get either better ride quality or a greater choice of tire types or as part of a overall weight reduction effort to improve balance or performance.
Light wheels in 15 or 16 inch diameters that are also fairly wide are very desirable to our crowd. That's a universal opinion. Tire types and sizes are where the goals and expectations of each person tend to diverge. Once you have experienced what a good, lightweight set of wheels with the proper tires does for the feel of your Fiesta, you will fully understand why the discussions go on for dozens of pages!

The stock wheels on my fiesta are also 195/50r16 with a +42mm offset; I was wondering if someone knows if a 205/50r16 say a +40mm or +38mm or a 205/45r16 would fit without rubbing. I mainly want to try and get a bit more rubber for a softer ride and try to fill up the wheel wells as much as I can with just rims and tires.

Adding a lower sidewall tire will kill the ride. Your compliance will go away. More sidewall gives a more compliant ride, generally speaking. If you want to fill up the sidewall you need to lower the car a bit, but small sidewalls won't make it softer riding. If you want a bit softer ride maybe you need new shocks?
